I have been under the weather for the past few days. I woke up with a terrible sore throat only to find out that my tonsils were so swollen that they were touching each other! At first I was a bit paranoid so I went to get screened for covid19, and thankfully everything came back negative.

With that anxiety out of the way I realized I was starving. But what could I eat with such a severe sore throat? A bowl of my mama’s award-winning, spicy chili of course! Some people would steer clear of spicy food when they’re feeling sick, but I embrace it. Mom always made her chili when I felt sick. I think because it’s heartier than soup, but still soft enough to eat. The heat of the spice that goes into it just clears up my congestion and numbs my throat for a while. I love it. So without further ado:

Mom’s Award Winning Chili

Mom's tried and true classic chili recipe. So tasty it has won 1st place in her work's annual chili cook off twice! This chili is heavy on the cumin and cayenne and even more on the love. It's truly one of my favorite comfort food recipes.

Equipment

Ingredients
  

  • 2 lbs ground beef
  • 1 white onion chopped
  • 1 can diced tomatoes
  • 1 can hominy
  • 1 can black beans
  • 2 tbsp cumin
  • 1 tbsp paprika
  • 2 tsp black pepper
  • 1 tbsp salt
  • 3 tbsp cayenne pepper use less, or none at all if you like it less spicy
  • 1 lime cut into wedges (very important ingredient!)
  • cheddar cheese grated
  • 3 green onions sliced
  • ½ bunch cilantro chopped
  • sour cream
  • 2 cups water may need more

Instructions
 

  • Brown the ground beef in a large pot over medium high heat.
  • While the meat is cooking, add the salt, pepper, cumin, paprika, and cayenne pepper. Note: you can use less cayenne or more cayenne depending on how spicy you like it. Once the spices are mixed in well, add the onion.
  • Cook until the meat is brown and the onions have softened.
  • Add the beans, hominy, and tomatoes, and cover in enough water so that everything is just submerged.
  • Bring to a rolling boil.
  • Continue boiling until the chili has thickened to your liking.
  • To serve, spoon the desired amount of chili into a bowl. Top it with the cheese, green onion, cilantro, a dollop of sour cream, and a squeeze of a lime wedge.
