Quick and Easy Watermelon Summer Salad
August. It’s hot. I’m sticky. And my hair is so frizzy that it looks like I stuck my fingers in an outlet. Thank goodness for central AC! Albert and I have been spending more time indoors as the heat continues to rise which is allowing us to spend more time on our hobbies, like cooking and gardening. We just bought another houseplant and may start growing our own herbs at home! There’s nothing fresher cooking with food that you grew yourself.
Albert is the one with the green thumb so he’ll be in charge of that project. One of the things I’d like to grow next summer is watermelon. Juicy, cold watermelon is definitely the most refreshing fruit this time of year. Eating it on it’s own is great, but because it’s so mild in flavor it goes wonderfully in salads! This recipe is my summer salad perfect for those scorching hot days.
Quick and Easy Watermelon Summer Salad
Equipment
- large mixing bowl
- Sharp knife
- cutting board
Ingredients
- 1 watermelon cut into 1 ½ inch cubes
- ¼ cup feta cheese crumbled
- ½ red onion sliced
- ¼ cup mint leaves
- 2 tbsp olive oil extra virgin
- 1 tbsp red wine vinegar
Instructions
- Combine the olive oil and red wine vinegar in a small bowl.
- In a separate bowl mix the remaining ingredients.
- Top the salad with the olive oil and vinegar dressing.
- Enjoy!
